Grease traps/Interceptors

What are grease traps/interceptors?

First, let's clarify the difference between a grease trap and a grease interceptor. Generally, traps are installed in the flooring of restaurants or other establishments that need grease management.  Grease interceptors are installed underground and work hard to eliminate F.O.G. from wastewater that needs to move along the system for remediation.


A grease interceptor is a holding tank that separates grease, oil, and settlable solids from gray water leaving restaurants.  They are designed to capture fats, oils, and grease (F.O.G.) so that they can be removed from the wastewater stream and disposed of properly.   

Remember:  Everything that goes down a sink or a drain is biological and has to go somewhere. It doesn't just disappear!

Water passes through grease interceptors and washes most of the microbial populations out of the environment. This causes problems because the microbes produce enzymes that break down waste into smaller particles that are then digested by the bacteria.  When populations are upset more waste passes down the line.
